is a little story
behind the boat noodle
dish, which is a Thai style
noodle dish that has been
served since 1942, around
the premiership of Plaek
Phibunsongkram. This
dish was originally served from boats
that travelled through Bangkok’s canals.
The one person who worked the small
boat was a one-man-show. He did every-
thing from paddling the boat to boiling
the noodles, seasoning the soup, serving
the dish, checking the bill and washing
the dishes. In keeping with tradition,the
noodles are still served in small bowls.
The smaller bowls were easier for the
boatman to handle and that practice has
stuck.
